Ingredients:
- 500g carrots, peeled and sliced into rounds
- 2 medium sweet potatoes (about 500g), peeled and cut into chunks
- 100g dried apricots
- 100g pitted prunes
- 50g raisins
- 1 apple, peeled, cored, and chopped
- 60ml honey (about 4 tbsp)
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- Zest of 1 orange
- 240ml orange juice (about 1 cup)
- 240ml water (about 1 cup)
- 1 tbsp vegetable oil (for greasing the baking dish)
- Pinch of salt
Instructions:
- Preheat the oven to 180°C (160°C fan) or gas mark 4. Grease a large ovenproof dish with vegetable oil.
- Prepare the vegetables and fruits: Peel and slice the carrots into rounds, peel and cube the sweet potatoes, and chop the apple.
- Layer the ingredients: In the greased dish, place the carrots, sweet potatoes, apricots, prunes, raisins, and chopped apple.
- Mix the liquid and spices: In a bowl, combine the honey, brown sugar, cinnamon, nutmeg, ginger, orange zest, orange juice, and water. Stir well.
- Pour the mixture over the vegetables and fruit, making sure everything is evenly coated.
- Cover with foil and bake in the preheated oven for 1 hour.
- Remove the foil, stir gently, and bake uncovered for an additional 30 minutes, or until the sweet potatoes and carrots are tender and the liquid has thickened slightly.
- Serve: Tzimmes can be enjoyed hot as a side dish, especially during festive meals or holidays like Rosh Hashanah.
