Cheesecake and sweet treats are Shavuot staples, but for those with less of a sweet tooth, here are two savoury dairy-heavy recipes to celebrate the festival with.
Spinach And Cheese Borekas Recipe
Ingredients:
- 1 package of puff pastry dough, thawed
- 250g frozen spinach, thawed and drained
- 250g of crumbled feta cheese
- 125g cup of shredded mozzarella cheese
- 60gcupofgratedParmesancheese
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
Method:
- Preheat your oven to 190C and line a baking sheet with parchment paper.
- In a mixing bowl, combine the spinach feta cheese, mozzarella cheese, and parmesan cheese. Season with salt and pepper to taste.
- Roll out the puff pastry dough and cut it into squares.
- Place a spoonful of the spinach and cheese mixture onto each square of dough.
- Fold the dough over the filling to form a triangle and seal the edges by pressing.
- Place the filled borekas on to the prepared baking sheet.
- Brush the tops of the borekas with the beaten egg wash.
- Bake in the preheated oven for 15 to 20 minutes, or until the borekas are golden brown and crispy.
Creamy Mushroom And Leek Quiche Recipe
Ingredients:
- 1 pre-made pie crust
- 1 tablespoon of olive oil
- 1 leek, thinly sliced
- 8 ounces of mushrooms, sliced
- 4 eggs
- 1 cup of heavy cream
- 1 cup of shredded Gruyere cheese
- Salt and pepper to taste
- Fresh chopped parsley for garnish (optional)
Method:
- Preheat your oven to 190C.
- In a skillet, heat the olive oil over medium heat. Add the sliced leek and mushrooms, and sauté until softened, about 5 to 7 minutes.
- In a mixing bowl, whisk together the eggs and heavy cream until well combined.
- Stire in the shredded Gruyere cheese into the egg mixture.
- Place the pre-made pie crust into a pie dish. Prick the bottom of the crust with a fork.
- Spread the sautéed leek and mushroom mixture evenly over the bottom of the pie crust.
- Pour the egg and cheese mixture over the leek and mushroom layer.
- Bake in the preheated oven for 30 to 35 minutes, or until the quiche is set and golden brown on top.
- Allow the quiche to cool for a few minutes before slicing.
- Garnish with fresh chopped parsley if desired, then slice and serve.
